Fresh tomato stew is a popular delicacy among the people of Nigeria. It can be eaten with rice, yam, pasta, bread, and so on. This is prepared with fresh tomatoes, fresh pepper’ onions, fish, or meat. You can also use chicken or turkey, locust beans (iru) and cow skin (ponmo) to cook it depending on how want it.

Ingredients needed to prepare stew are:

  • Tomatoes
  • Habenero pepper (Ata rodo)
  • Bell pepper or Shombo (optional)
  • Onions
  • Meat
  • Dried fish
  • Crayfish
  • Groundnut oil
  • Seasoning cubes and salt
  • Curry
  • Thyme
  • Ginger and garlic

Tomatoes and pepper are a good source of vitamin c, potassium, folate, vitamin k, E, and protein. Onion is rich in fiber calcium, phosphorus, iron, protein, and magnesium.

Meat is rich in protein. Sodium, calcium, and vitamins

Fish is rich in omega -3 fatty acid which is essential for the brain and eye, also improves mental health in the oil age

Ginger stimulates the digestion of food, lowers blood pressure, and reduces inflammation. Garlic reduces the risk for heart disease, boosts the body’s immune system, and has anti-fungal and anti-bacterial properties


Procedures to Prepare

  • Wash your tomatoes, pepper, onion and blend roughly and set aside
  • Wash your meat very well and season with spices and onion
  • Boil your meat for some minutes.
  • After boiling your meat, put a pot on the fire, pour your groundnut oil, allow to heat for 2 minutes, and fry the meat
  • Wash your dried fish very well and set aside
  • Set your fried meat apart
  • Add the sliced onion, curry, and thyme into the oil. Let it fry for 2 minutes
  • Or you can add the spices later
  • Add your blended tomatoes, pepper and cover the pot
  • Add your ginger and garlic, with your crayfish
  • Let the pepper boil for 10 to 15 minutes, stir at intervals to avoid burning
  • Add your fried meat, fish and season cubes, and salt, and stir together
  • Allow it to cook for another 5minute so that the meat and fish will absorb the pepper
  • Your pepper stew is ready and eats with rice
